Maa Ki Rasoi Recipe Corner
Mumbai Pav Bhaji
You'll need
- 3 potatoes, boiled
- 1 cup mixed veg (cauliflower, peas, carrot), boiled
- 2 onions, 3 tomatoes and 1 capsicum, finely chopped
- 2 tbsp Imamdasta Pav Bhaji Masala
- 1 tsp Imamdasta Kashmiri Mirch Powder
- 3 tbsp butter, salt, lemon, pav
The method

Cook the base
Melt butter on a tawa or kadai, cook onions, then capsicum and tomatoes until soft and mushy.

Add the masala
Add Imamdasta Pav Bhaji Masala, Kashmiri Mirch and salt. Cook for 2 minutes.

Mash it up
Add the potatoes and veg with a little water and mash everything together. Simmer until thick.

Toast the pav
Toast the pav in butter with a pinch of Pav Bhaji Masala.
To serve: Top with butter, onions, coriander and a squeeze of lemon.
